Good Food and Gratitude: My Paleo Thanksgiving

It's hard to believe that Thanksgiving is right around the corner. Quite frankly, this year the holidays couldn't come soon enough. With all of the noise and intense energy that has been going on in the aftermath of the election, we could all use a break. It's time to surround ourselves with family and friends, good food, and LOVE. During these next few weeks, we need to stop, breathe, and reflect on all that we are grateful for.

My Paleo Rosh Hashanah Menu

This weekend we will be celebrating Rosh Hashanah, the Jewish New Year, which begins Sunday evening. Vegetarian Cooking!

I got to bring home some leftovers from the ‪#‎Ayurvedic‬ Vegetarian cooking class I attended last night with @holistichealthinista! I am not a vegetarian but learning techniques for cooking vegetables, soup and raw cheese was a educational and delicious experience. This was a digestive mung dal soup made with spices to enhance digestion. Mung beans are not paleo but they are the most easily digestible bean and I have been testing them out to see if they work for me. It was served with green cabbage and kale made with black seeds and spices, topped with homemade cheese (paneer).
